Vintage Recipe: Strawberry Shortcake

This time of year is Strawberry season for many parts of the world.

My childhood memories of strawberries are of Mom making strawberry freezer jam and eating them raw with store-bought, yellow sponge cakes and whipped cream.

Hoping to do better for my family by making shortcakes, I found this recipe in the Psi Iota Xi Cookbook from Markle, Indiana from 1981.

**Just this week I happily purchased this pretty hanky with strawberries embroidered from Vintage Hussle Shop in Decatur, Indiana. It is a great store with lots of reasonably priced items ranging from 1930-1980s. I plan to make this a regular shopping stop in my search for vintage items!

The recipe worked well as a cookie to be eaten with dabs of whipped cream and a slice of strawberry.

Or you could do as the recipe suggests and put a dollop of whipped cream between two shortcakes with strawberries on top.

This is a quick economical way to provide a yummy early-summer dessert. Have fun!

Shortcakes

Prepare time: 15 minutes

2 c. flour

3 t. sugar, divided

4 t. baking powder

½ t. salt

1/3 c. shortening

1 egg

Milk

2 T. melted butter

Sift dry ingredients.

Work in shortening.

Beat egg in measuring cup; add milk to fill Âľ full.

Add to first mix.

Roll ÂĽ-inch thick & cut with 3-inch floured biscuit cutter. (I used a smaller size; see Vintage Find of the Week below)

Place half of circles on ungreased baking sheet.

Brush with melted butter and lightly dot with sugar.

Place remaining circles on top & repeat process.

Bake in hot oven 15-20 minutes (400 degrees).

Serve with fresh strawberries and whipped cream.

Makes approximately 15.

Vintage Find of the Week:

I didn’t have a 3-inch biscuit cutter as the recipe called for. Instead, I used an antique 2-inch one I found in a thrift shop.

With its sturdy handle and cute scalloped edges, it provided great results. It made me feel like my grandma might have felt when she cut out dough — productive and efficient.

Who needs a fancy cookie press when you can use this nifty item?
