Vintage Eats Recipe: 1977 Impossible French Apple Pie

Happy National Apple Pie Day!

I don’t make a lot of pies because it seems like a lot of work for only 8 servings. But I decided to give this recipe a go, especially since it had a special title.

The word ‘impossible’ caught my attention. Presumably, it’s called impossible because the pie makes its own crust.

Also the word ‘French’ was intriguing. Although I have a copy of Julia Child’s ‘Mastering the Art of French Cooking’, I have yet to make anything from it (truth be told, I’m almost afraid to pick it up!). Nor have I made anything else even remotely close to being French.

But in reading through this recipe it seemed like this was a doable treat. At the end I concluded it was not difficult and the scent of baked apples and their accompanying spices (cinnamon and nutmeg) filled the house with goodness. It didn’t spoon out as perfectly as I would have hoped for a stunning photo, but I hope you get the idea of its sweetness from the simple shot w/ a dollop of whipping cream on top.

Impossible French Apple Pie

6 cups sliced, pared tart apples (I used Fuji and didn’t pare/peel them)

1 ¼ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 cup sugar

¾ cup milk

½ cup Bisquick baking mix (I used pancake mix)

2 eggs

2 tablespoons margarine (I used butter)

Streusel:

1 cup Bisquick bake mix (again I used pancake mix)

½ cup chopped nuts

1/3 cup packed brown sugar

3 Tablespoons margarine (I used butter)

Heat oven to 325 degrees.

Grease pie plate 10×1 ½-inch. (I put parchment paper on bottom in addition to greasing the sides)

Mix apples and spices; turn into plate.

Beat remaining ingredients, except streusel until smooth, 15 seconds in blender on high or 1 minute with hand beater. (I used blender)

Pour into prepared plate.

Mix streusel ingredients together until crumbly. Sprinkle over apples.

Bake for 60 minutes or until knife inserted in center comes out clean.

Yield: 8 servings.
