
Those of us in the US have a big weekend coming up—Father’s Day.
In America it is held always onthe third Sunday of June. I thought it was just an American holiday, but, according to online research, other countries honor fathers on the same day– UK, Canada, India.
Still other countries observe this special day at different times of the year—Spain celebrates in March, for example.
It will be a tricky day for me as my husband is deceased. My children and I will still honor him with a discussion of good memories and sharing of photos. We loved (and still love) him so much.
Father’s Day coincides with my husband’s extended family reunion tomorrow. This event is especially hard for me to attend.
We always enjoyed attending this event for decades. His siblings, aunts, uncles, cousins were fun to reconnect with. We scheduled vacations around it and were even in charge of it for a few years.
Now, without him at my side, I find it hard to be in their midst.
They all loved him and he loved them. My daughter is attending with me and that will help.
I have learned through grief counseling that I don’t have to force myself to stay for the entire afternoon. I may leave right after the meal, which is what I did last year.
At least I’ll have gone and honored him as I know he’d want me to go.
Then at church on Sunday they will honor fathers. Everyone who is a father will get a small gift. Sigh.
The happy thing is, my son is a father for the first time!
So the day can be looked at as a happy occasion for our family too.
Maybe you have a lot of strong feelings connected with Father’s Day. I encourage you to pray about it and lean on God to help you through as I am doing. That’s my solution for everything in life, happy or sad.

Chili Cheese Biscuits are a fun-to-make recipe for an extra-special treat with meatloaf or another protein entrée.
To be honest, it is a little messy with rolling out a dough. But I’m trying to challenge myself to try new types of recipes, rather than just make cookies (but, my inner self wails, “We can never have too many cookies!”).
So just plan for a little time for clean-up. As with many of the recipes posted here, I encourage you to get the kids involved with rolling out and even measuring the sides with a ruler — that is, if you even have a ruler! I keep one in my junk drawer, mostly for baking. 😊
It is a relatively inexpensive recipe to create with the primary ingredient the cheese.
If you like spice, you may want to double the chili powder. I doubled it the second time I made this recipe and it was even more tasty. Maybe you’ll be brave enough to add even more!

Cookbook Corner

I found this recipe in the Ground Beef Cookbook (1967). It is staple-bound and contains 124 pages.
The back cover is so funky that I included it (below).

No mention is provided of who put it together, except that it was published by Favorite Recipes Press, which I suspect is a vanity publisher that produced many types of books for pay.
No matter, it is a good cookbook with recipes for soups, sandwiches, skillet dishes, casseroles, pies (meat) and even ‘First Lady Favorites.’
Mrs. Lyndon B. Johnson, who in 1967 was wife of President of the US, is listed as the first contributor with Pedernales River Chili.
Chili Cheese Biscuits is listed under the heading for Meatballs. It might be interesting to split one of these biscuits, still warm from the oven, and put in half of a meatball for a mini-meatball sub.
Make your own meal with these Chili Cheese Biscuits as a nice accompaniment. They are economical and, though they take a little effort, are great fun with fantastic results.

Chili Cheese Biscuits
My notes:
- Skim milk can be substituted for evaporated.
- A fork or even your hands can be used to cut in the shortening, though be careful not to handle the dough too much with your hands.
- A pastry scraper (pictured) works well for the rolling up and cutting of the dough.
- A plastic sheet with inches and circles measured on it is invaluable for recipes like this. Clean up is a breeze!
Ingredients:
2/3 cup flour (I used white whole wheat)
1-½ teaspoons baking powder
¼ teaspoon chili powder
¼ teaspoon salt
1/4 cup shortening
1 egg
1/4 cup evaporated milk (I used 1% milk)
2/3 cup grated American cheese

1967 Chili Cheese Biscuits
- Combine flour, baking powder, chili powder, salt.
- Cut in shortening until particles are fine.
- In separate bowl combine egg and milk.
- Add egg mixture to dry ingredients, stirring until dough clings together.
- Knead lightly on floured surface.
- Roll out to 12” square.
- Sprinkle with cheese.
- Roll up as for jelly roll.
- Cut into eight slices.
- Place biscuits on top of casserole or on parchment-lined cookie sheet.
- Bake at 400 degrees for 20-30 minutes, until biscuits are slightly browned.
Yield: 8 servings
