Recipe: Chocolate Malt Shoppe Cake

This recipe’s cookbook is one of the most ‘unofficial’ ones in my inventory.

It has no cover and is simply held together by expandable brads. The front page is a typewritten page decorated with the title ‘Quick ‘n Easy’ and “Y.H.S. choir of 1987-1988.”

I don’t know what the Y.H.S. stands for — I assume a high school.

Nonetheless, this little collection of approx 12 pages had a delicious recipe — ‘Chocolate Malt Shoppe Cake.’

I had never tasted malted milk and had only read about in books with a 1950s setting. A chocolate malt shoppe cake seemed like a fun adaptation of a bygone flavor.

I ordered Nestle’s chocolate malt powder it from Walmart so it was easy to put together.

From the way my family devoured this simple little cake (it makes one layer), I’ll definitely be ordering it again!

Chocolate Malt Shoppe Cake

Prepare time: 10 minutes

Baking time: 30-35 minutes at 350 degrees

1 1/3 c. instant chocolate malted milk powder

1 c. all-purpose flour (if self-rising flour is used, decrease soda to ¼ t.; omit salt)

1 t. soda

½ t. salt

1 t. vanilla

1 egg

1 c. sour cream

1 c. chopped nuts (optional)

12 chocolate covered buttercream wafers

Grease bottom of 8-inch round or square pan. Combine all ingredients except wafers in large bowl. Blend well at lowest speed of mixer; beat 2 minutes at medium speed.

Pour batter into pan.

Bake until cake tests done in center.

Place wafers on top of hot cake. Let stand 5 minutes, spread.

Tip: Combine 1 c. heavy cream and ¼ c. instant chocolate malted milk powder; beat until thick. Serve over cake.

My notes:

  1. Our budget was stretched this week so I made this cake without chopped nuts, additional malted milk powder frosting, and the chocolate covered buttercream wafers. It turned out fine with my adding a light cover of whipped topping and red raspberries already on hand. If adding fruit, keep refrigerated.
  2. I stuck with all-purpose flour – great results!
  3. A greased 9-inch springform pan (round cake pan that features a removable bottom and sides) worked well.
